Knotty pine paneling unfortunately comes wrapped in plastic, with only six boards to a pack. You need to unwrap them and place them on “stickers”, short pieces of wood, so that all edges are exposed to the air and can acclimate to the humidity and temperature and not warp when you put them up. You need to do this at least 4 days, ideally a couple weeks, before you install them.
